Where can I find information about how many steps are in each course and how to decide how many steps to assign?

Great question Timothy, Thank you for asking.  Each component of a course is called a step (e.g. lesson video, lesson problems, drill, review, exam, etc.). The number of steps in a course may vary depending on the grade level and content of a course. You can view how many steps are in a course through your Parent Account by completing the following actions:
 
1. Launch the Acellus App;
2. Sign into the parent interface;
3. Select your student’s name;
4. Click on the Syllabus tab;
5. Scroll to the bottom of the syllabus.
 
Since each course is self-paced, Power Homeschool does not regulate how much work a student must complete every day, or limit how much work they can complete every day. This is something that is left up to parents.
 
If you would like to set a specific number of steps for your student to complete in each course every day, you can do this by adjusting the goals in your parent interface (under “Manage Account”). You can set a weekly goal for your student, which the system will break down into a daily goal.  
Note -- When setting the weekly goal bear in mind that the "week" is a five day school week (MON.-FRI). You will want to use that when calculating the amount of steps per week to assign for each student.

If it helps any, my daughter does 40 steps per week. She is in between 10th and 11th grade. This comes down to ~8 steps per day, so 4 videos. Her Stem 1 class she has set at 99 steps (the max allowed) primarily because it is meant for 3rd graders and she plans on finishing it in 10 days. When we started the automatic goal was 5 steps. Very odd for her class because it would have her watch the lesson video on Monday, do the questions Tuesday, etc. It would all really depend on your child's age, attention-span, and goals for when S/he wishes to finish the class.
